A few people have expressed interest in my sinful pumpkin cookies, so here is the recipe.
Ingredients:
4 cups flour
2 cups oats
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
1 cup sugar
2 cups brown sugar
1/2 cup butter
1 egg
1 teaspoon vanilla
15 oz Libby’s Pumpkin
1 cup semi sweet chocolate chips
Instructions:
Preheat oven to 350.
Combine dry ingredients (no coco chips yet) together in large bowl. Mix them.
Melt butter and combine vanilla, egg with butter in separate bowl and mix.
Add pumpkin to dry ingredients.
Add butter/vanilla/egg mixture.
Stir (I use my CLEAN bare hands. It’s just too damn thick to use a spoon or a mixer).
Mix in coco chips.
Make slightly smaller than golf ball-size balls on PAM-sprayed cookie sheet.
Bake for 20 min.
Makes about 20 cookies.
